WARM PEAR & BRIE SALAD WITH BALSAMIC GLAZE

INGREDIENTS

1 tablespoon plain oil

2 red pears, sliced

½ cup walnut pieces

¼ cup maple syrup

2 sprigs fresh thyme

1 cup balsamic vinegar

½ cup brown sugar

Summer greens and edible flowers

6 slices Parma ham or similar

100gms Food Snob Classic French Brie

INSTRUCTIONS

  1. Heat the oil in a large non-stick pan and sauté the pear slices and walnut pieces 2-3 minutes until just coloured, add the maple syrup and thyme and cook a further 1-2 minutes until caramelised and golden but still holding their shape.
  2. Simmer the balsamic and brown sugar in a small saucepan until reduced and syrupy.
  3. Arrange the greens, Parma ham, brie slices, pears and walnuts on a platter and drizzle with the balsamic glaze. Serve with crusty bread.
