8 free range chicken drumsticks
2 tbsp extra virgin olive oil
2 tbsp Moroccan seasoning
½ green cabbage
1 fennel bulb
¼ cup good quality mayonnaise
¼ cup natural yoghurt
¼ cup Food Snob Mojo Verde
Preheat the oven to 180°C.
Place the chicken drumsticks in a baking dish, drizzle over the olive oil and Moroccan seasoning toss to coat.
Cook for 20mins (or until the chicken juices run clear and the chicken is golden).
While the chicken is cooking make the slaw; finely slice the cabbage and the fennel, also the fennel tips.
In a small bowl combine the mayonnaise, yoghurt and Food Snob Mojo Verde, toss this through the cabbage and fennel.
