LAMB & HALLOUMI SKEWERS WITH GARLIC, LEMON & MINT OIL

INGREDIENTS

2 lamb loin strips

1 red onion

1 red pepper

1 zucchini

200g Food Snob Halloumi

¼ cup olive oil

1 clove garlic, finely diced

1 teaspoon lemon zest

8 mint leaves, shredded

INSTRUCTIONS

  1. Pre-heat the oven to 200 degrees.
  2. Cut the lamb, vegetables and halloumi into even sized cubes and thread alternatively onto metal or pre-soaked bamboo skewers.
  3. Combine the oil, garlic, lemon and mint and mix well.
  4. Brush the skewers generously with the flavoured oil.
  5. Heat a large non-stick pan and sear the skewers for 2-3 minutes until just coloured all over then transfer to a lined oven dish brush with any remaining flavoured oil and cook for 4-5 minutes or until the lamb is cooked, the halloumi is golden and vegetables tender.

Makes about 8 skewers
