HALLOUMI VEGETABLES BURGER

INGREDIENTS

2 tablespoons olive oil

1 small orange kumara, thinly sliced

1 red pepper, sliced

2 small yellow or orange sweetie capsicums, sliced

1 zucchini, sliced

1 small red onion, sliced

200gm Food Snob Cypriot Halloumi

Fresh greens

4 burger buns, toasted

Hummus or mayonnaise and Sweet chilli sauce to serve

INSTRUCTIONS

  1. Heat the oil in a frying pan and cook the vegetables in a batch until tender and just coloured.
  2. Wipe the pan clean and slice the halloumi thickly, pat each slice dry on paper towels.
  3. Spray or lightly brush the pan with oil and fry the slices until golden and softened.
  4. Layer each burger with hummus, greens, seared vegetables and halloumi then drizzle with sweet chilli sauce.
