Soak skewers in water. Compile ingredients on skewers, one by one. Add one bell pepper, one mushroom, one basil leaf and one piece of chorizo and repeat this process so you have two of each ingredient per skewer.
Repeat again on the rest of skewers depending on how many you want to make.
Fry lightly with olive oil in a pan, or place on BBQ until lightly cooked and warm.
These skewers are delicious served as a canape, or can be part of a main meal with a spring salad on the side. Great for entertaining.
