Chicken involtini stuffed with Food Snob Romesco, spinach and halloumi


2 chicken breasts, halved horizontally
1 tub of Food Snob Romesco Sauce
8 slices of streaky bacon
200g Food Snob Cypriot Halloumi, sliced
2 tbsp extra virgin olive oil


Preheat oven to 180ºC fan bake.

Place chicken on a board and pound gently to flatten.

Spread over 2 tbsp of Food Snob Romesco Sauce and 3 slices of halloumi.

Roll up length-ways and wrap 2 slices of streaky bacon around to secure. Place in a baking dish and repeat.

Drizzle over the olive oil and season with salt and pepper.

Place in oven and cook for 20 minutes (or until cooked and juices of chicken run clear).
