4 Terakihi fillets
1 tub Food Snob Romesco Sauce
¼ cup panko breadcrumbs
¼ cup parmesan cheese, finely grated
2 tbsp extra virgin olive oil
Parsley, finely chopped to serve
Lemon cheeks to serve
Pre-heat the oven to 200º C and line a baking tray with baking paper.
Place the tarakihi on the baking tray and spread over the Food Snob Romesco Sauce.
Combine the breadcrumbs and parmesan, season with salt and pepper.
Sprinkle over the breadcrumb mixture onto the top side of each fish fillet then drizzle over the extra virgin olive oil
Bake in the oven for 15 minutes or until the crumbs are golden and fish is just cooked through.
Sprinkle over the parsley to serve.
