Aged English Cheddar Fluffy Omelette



3 eggs
40g Food Snob Aged English Cheddar
Salt and Pepper
Olive Oil



  1. Set oven temperature to 180 Degrees Celsius and make sure you have a non stick fry pan or seasoned skillet.
  2. Separate 3 eggs – whites in one bowl and yolks in another
  3. Whisk the whites to a nice peak – should be firm
  4. Whisk the yolks – these should double in mass
  5. Grate the Food Snob Aged English Cheddar
  6. Heat the skillet, medium temperature with a little olive oil.
  7. Fold the egg yolks with the whites gently and season with salt and pepper. (you may like to add chilli flakes, lemon pepper or paprika)
  8. Add butter to the skillet and swirl to evenly coat the base and sides of the pan.
  9. Pour the whisked eggs into the skillet; let set slightly and push the eggs from the edge towards the centre. Let the egg fill the spaces.
  10. Sprinkle cheese over the omlette
  11. Place skillet in the oven for 4-5 minutes until risen and golden brown. Keep your eyes on the omelette.
  12. Tilt the skillet and slide the omelette onto a serving plate. Serve and enjoy.
