Our friends at My Food Bag have created a simple and delicious recipe for our Food Snob Dutch Gouda or Cumin Gouda which is perfect for this cheese.
500g macaroni pasta
1 brown onion
1 pack Food Snob Dutch Gouda
3 Tbsp flour
3 cups milk
1 Tbsp mustard
½ cup panko breadcrumbs
Preheat oven grill to high. Bring a large pot of salted water to the boil.
Cook pasta in a pot of boiling water for 8-15 minutes, depending on pack instructions. Drain well then return to pot with a drizzle of oil to prevent sticking.
Dice onion and bacon and grate cheese.
Heat a drizzle of oil in an oven-proof fry-pan on medium-high heat. Cook onion and bacon for 6-8 minutes, until caramelised.
Melt butter in a pot on medium heat. Add flour and stir, until butter has absorbed, and flour turns slightly golden. Gradually whisk in milk. Stir in mustard and grated cheese and whisk to combine. Season to taste.
Transfer sauce, bacon and onion to pot with cooked pasta and stir well to combine. Place pasta into oven-proof pan used for bacon and top with breadcrumbs.
Grill in oven for 2-3 minutes, until golden. Keep an eye on breadcrumbs while they cook.
